Healthy Low Sugar Coconut Chocolate Easter Eggs

Easter doesn't have to mean tonnes of sugar and unhealthy choices (although balance is key, of course!). We're all about healthy alternatives here at Get More Vits, that's why our Nutritionist Becky Graham has created a delicious, healthy take on chocolate Easter eggs.

High in fibre, healthy fats and antioxidants, these low sugar coconut chocolate Easter eggs taste like a very well-known coconut chocolate bar, only healthier! Coconutty, rich and coated in decadent dark chocolate for the perfect bite. Try for yourself...

Ingredients

  • 250g rolled oats
  • 6 tbsp desiccated coconut
  • 3 tbsp honey
  • 1 tsp vanilla extract
  • 50ml water
  • 100g dark chocolate 70% cacao or higher
  • Assorted decorations optional

Method

  1. Combine oats & coconut in a food processor/blender.
  2. Tip into large bowl and add vanilla extract, honey and water and stir.




  3. Get your hands in and roll mixture into egg shapes.
  4. Press into silicone mould – if you don’t have one don’t worry, you can freestyle this part.




  5. Freeze for 1 hour.
  6. Once frozen, melt chocolate in the microwave (or use a bain-marie).



  7. Prep a baking tray lined with baking paper.
  8. Dip egg shapes into melted chocolate and place on tray.



  9. Get creative with sprinkles!
  10. Refrigerate for a few hours – ideally overnight.
